An exciting program designed to teach students how to identify beef cuts and also how to select various cuts of meat by using specially made bone replicas. The replicas are made of polyester resin and duplicate real bones with amazing realism and detail. They also help in selecting the correct cut according to desired tenderness, cooking method, etc. The kit contains the 11 major beef bones, 30 student workbooks (including charts, diagrams, exercises), 30 student tests, and two overhead transparencies.
