A complete cheesemaking kit that lets students successfully make cheese using basic modern science concepts and principles. Everything necessary is provided. This is the only kit that prepares milk for the curdling process by adding a viable, nontoxic bacteria to it. This important step adjusts the pH and enhances the flavor. The milk-clotting enzyme provided in the kit is a fermentation-derived product and is extremely effective in this process. Students not only make cheese, they also have a chance to study live, harmless bacteria in an important food process, as well as the live bacteria itself. Additional Lactobacillus tablets and milk clotting enzyme are included for additional experiments in making cheese with chocolate milk, fresh whole milk, etc. Complete for 30 students in groups of two.
