USDA Cheese Grading Kit

A visual aid kit developed by the Dairy Grading and Standardization Branch, Dairy Division, Agricultural Marketing Service, United States Department of Agriculture, in cooperation with representatives from various segments of the dairy industry. It is intended to assist the USDA grader in the evaluation of visual characteristics which affect the assignment of a U.S. Grade. It consists of vinyl plastic plug segments representing varying degrees of six body characteristics and a series of photographs representing five color characteristics defined in the U.S. Grade Standards. In addition, this grading kit also defines levels of mold and an acceptable color range for medium yellow-orange.
