Kit includes a detailed recipe booklet, cheese mold, dairy thermometer, coarse cheesecloth, vegetable rennet tablets, direct set mesophilic starter, direct set thermophilic starter, and calcium chloride. 16 varieties of cheddar cheese. Citric acid not included.
